sugar free cooking with kids. . .



These zesty little treats are sugar and gluten free,
perfect for making and eating with the little people. 
The following recipe is taken and adapted from the
I missed the baking of sweet treats more than the actual eating.
To be honest, I resisted purchasing this cookbook for a long time,
because I didn't think i needed it.


. . . but now that I have it, I'm glad i do.
It has helped to sharpen my focus and resolve
and the 'Sugar-Free Kids' chapter
has been particularly useful.

Zest 'n' Poppy Cookies

2 tablespoons grapeseed oil
1 1⁄2 tablespoons granulated stevia
1 tablespoon vanilla powder
1 tablespoon lemon zest
1 3⁄4
 cups almond meal
pinch salt
1 tablespoon poppy seeds
1 egg white

Preheat oven to 180 C. 
In a bowl, combine oil, stevia, vanilla and lemon zest. 
Add the almond meal, salt and poppy seeds.
Work with your fingers for a good five minutes 
{this will release the oil in the meal and form a better dough}.
Roll dough into balls.
 Brush with lightly beaten egg white to give it a pretty gloss {we skipped this step}.
Bake for 6-8 minutes, until they get a light golden brown tinge around the edges.

Notes:
We were short on almond meal and substituted in some quinoa flour, which made the mix a bit crumbly
. . . and so we opted to roll the dough into balls rather than traditional cookies.
If you haven't tried it before, you may find the sweetness of the stevia a bit intense at first.
If you are taking the sugar free path, these will hit the spot when you're craving a little something with your cuppa.

    1. I haven't yet, but I saw it in the Diggers Club catalogue and thought I'd like to give it a go!

    2. I've recently purchased a stevia plant from Diggers but it is still too young to harvest. Tasting a leaf I think the flavour isn't quite as intense as the powder.
      I'm currently trying to convert my tastebuds to stevia. It certainly has a different flavour but I am sure I will get used to it.
      I'll certainly try this recipe. Thank you.

  2. Oh yum, they sound amazing. I haven't had any sugar (and more or less no grains) for almost a month and I'm loving it. I don't really even feel like sweet things anymore. But these sound great for olive (who's a massive sweet tooth - in the sugary form of dates, sultanas, and so forth). Kellie xx

  3. they look yummy, i will give them a go. i might adapt them a little further and use a little honey instead of the stevia and coconut oil in place of the grapeseed oil. that should work ok i think.

  7. We've been kind of off sugar for some time. By kind of I mean we slip up quite often but I've definitely cut down on the baking. And I do miss the baking. Must check out that book. Those look quite good.
