4 eggs (whisked)
1/2 cup plain flour
1 cup caster sugar
1 cup dessicated coconut
125g melted butter
1 cup cream
3/4 cup milk
lemon rind of 2 lemons
1/4 cup of lemon juice
place ingredients in a bowl and mix
line a quiche dish with grease proof paper
&
pour in mixture
cook in 180 degree oven for 40 minutes
(or until firm and browning on top)
sprinkle with icing sugar just before serving
best served with a good dollop of double cream

the recipe calls for the rind of one lemon
but i always use at least 2
because i like the extra zing
i have done a gluten free version
by replacing the wheat flour with rice flour
and it turned out just as well

ReplyDeleteLemon tart is one of my all time favourites ... hardest part for me is to not eat the whole thing in one go, but it just goes so perfectly with cream and a cup of tea - Heaven!!
